I was recently introduced to what some claim to be a legendary Incan miracle food; quinoa (or as Mickey calls it, "living alien pod food").
Here's what I did with it, using:
1 cup quinoa
2 cups vegetable broth
2 handfuls of crimini mushrooms
2 cloves of garlic
1 tbsp butter
~3/4 cp soy chorizo
~3/4 can black beans
2 limes
1 cp cilantro
2 tsp thyme
2 eggs
bread crumbs
oil
oh and p.s. I don't measure stuff soooo... these are all like really rough estimates.
FIRST of all, cook the quinoa/pod food in the vegetable broth until it's fluffy like rice.
MEANwhile, sauté chopped mushrooms and garlic in butter.
Then add soyrizo, black beans, and the mighty Thyme. Just go bonkers with it. Bonkers.
Chop some cilantro and lime (here is a picture in case you don't know what THAT looks like).
Ok relax, it's about to get off the hook. Add the cilanch/lime to the quin, then add the soyriz/beans/shrooms to the quin (don't worry, there's a picture of this too, it's a food blog).
NOW. You can enjoy this little mixture as is, like I did with a sprig of cilantro and some Asiago cheese.
OR take up the HEAT with some QUINOA PADDIES, holler!
For the paddies, add like maybe 1 egg per 1-1.5 cups of quinoa mixture. I used about 2 cups so I used about 2 eggs. Math.

OK, now add bread crumbs. This is essential. I have no idea how much you add, just eyeball it til it looks thick and pasty.
Then, fry a big spoonful of it in like 1/2 inch of hot oil. SO good. They don't take long to cook, so watch them closely.
I enjoyed mine with avocado, asiago cheese, and peach salsa. Shout out to Trader Joe's.
