Lemon Sugar Cookies with Honey Buttercream

These were gone fast.



I decided to make lemon sugar cookies (using a lemon from my new lemon tree!) and I was gonna sandwich them with vanilla buttercream, when I got the brilliant idea to add honey to the frosting. SO GOOD.


Cookies:
2 3/4 cp flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1 cp butter
1 cp sugar
1 egg
1/2 tsp vanilla extract
zest of 1 lemon
juice from 1 lemon
+ 1/2 cp sugar, for later ;)

Frosting:
1 stick of butter
1 3/4 cp powdered sugar
1/3 cp honey
1 tsp vanilla extract
heavy whipping cream


Primarily, ZEST THAT LEMON, BIATCH.


Mix the dry ingredients. Then, take that extra 1/2 cup of sugar ;) and mix it with the lemon zest.


Then add the butter, mix til fluffy. Add egg, vanilla, and lemon juice, and blend in the dry ingredients. Make dough balls, put on a parchment-lined baking sheet, bake at 350 for 8 - 10. I baked 'em for 9, but they needed a little longer.


Frosting! First whip the butter and honey together. Then proceed to add the rest of the stuff, making buttercream frosting as usual. Eyeball the whipping cream for desired consistency.


Make a sam'mich.

The recipe made 24 cookies --> 12 sandwiches, which I shared among 12 different people and they all loved them. SUCCESS!
