Curry and Polenta

Two really great dishes I made for myself recently.




Yellow curry stew over jasmine rice. I used garlic, butter, green onion, evaporated milk, veggie broth, curry powder, cayenne pepper, black pepper, brown sugar, peanut butter, lime juice, potato, and home-grown Swiss Chard from our garden.

Polenta with creamy red pepper and tomato sauce on a bed of thyme & garlic quinoa. For the sauce, I just combined tomato soup, evaporated milk, and some puréed red pepper out of a jar. Side salad with homemade Bleu Cheese dressing compliments of my mom!

    Is the polenta TJs? did you just cut it up and heat it? and pour sauce on it?
    Can you do that? i didnt even knOW!
